Butter keepers work by the cooling action of evaporation, thus no need for refrigeration. A quarter inch of water is placed in the bowl and slightly softened butter is placed in the bell (the lid). Bell is placed back on the bowl (butter side down) and voile'. The bell can also be placed as the lid on the bowl while inverted for use at the table.
